AVOCADO TOAST

 

It’s not just for millennials anymore. Avocado toast is more popular than ever, and why not? It’s easy, delicious and healthy. Avocados are rich in B vitamins, potassium and folate. They also have plenty of fiber and healthy fat content.

Whole grain bread also contains fiber, is better for digestion than more processed breads, and breaks down slowly in the body, helping with blood sugar levels and energy.

But the other great thing about avocado toast is that it’s versatile. You can choose from a huge variety of great, healthy toppings. You can make it for breakfast, lunch or dinner. You can go mild or go wild. It’s up to you:

INGREDIENTS

  • 1 avocado, peeled and seeded
  • Juice of ½ lime
  • 2 slices of whole grain bread
  • Salt and pepper to taste

DIRECTIONS

  1. Toast slices of bread until crispy, or to your liking.
  2. In a small bowl, mash the avocado and combine with lime juice, salt and pepper.
  3. Use a fork to spread generously onto toast.

ADDITIONS

This is where the fun begins:

  1. To make a brunch classic and give yourself some protein, top with a poached, scrambled, or sunny-side up egg.
  2. For a healthy crunch and color, top with sliced radishes, pickled red onions, rings of mini sweet peppers, or mixed heirloom cherry tomatoes.
  3. If you like it spicy, add sliced jalapeños, red pepper flakes, or hot sauce.
  4. Add crumbled feta, goat or cotija cheese.
  5. Garnish with cilantro if you like it, or basil or parsley.
  6. If you want to keep it simple, use a shake of everything bagel seasoning or a favorite salt-free seasoning blend.
